Guanciale - The Amazing Carbonara Ingredient!

Guanciale is a rich and aromatic pork jowl and there’s no compromise when it comes to using the proper ingredients.

Whether you’re looking to make the perfect rendition of a Roman-style Spaghetti Carbonara or just want some really delicious pork, the fats will melt as this renders down. You can also cut it very thin and place it on top of some warmed crusty bread that’s been rubbed with a little garlic, where the fat and meat will start to melt and become harmonious.

If you’ve never had Guanciale before, then you seriously are missing a trick. Delicious, deep flavours in which the different parts of the pig are incredible. A good way to compare the difference is with chicken, the breast compared to thigh, a little flavour versus a lot of flavour, mellow versus mature.

It’s a rich, unctuous base for soups, stews and pasta dishes. That winter food feeling of a hearty meal occurs when you smell these deep aromas cooking.

Sliced very fine this Guanciale does not need the rind cutting off it. Simply place a few thin slithers over some warm tasted bread and wow, simplicity at its finest.

If you don’t have a fancy meat slicer then chilling your Guanciale to almost freezing point and using a very sharp vegetable peeler will do the job.
