Also called a Beef Skirt steak, a Bavette steak is from the flank and traditionally used for flash frying, served rare or medium. It can become a little tough if cooked to well done.

This steak sees the best results when cut across the grain. Bavette is a great BBQ meat.It's also the cut of steak often used in Cornish Pasties.
