A beautifully flavoursome roasting bird, ideal for a special Christmas dinner or festive family gathering.
A Butcher's Guide to Duck Portions
We recommend choosing a slightly larger duck than you might expect.
Duck naturally has a higher proportion of bone and fat than chicken or turkey, meaning the amount of cooked meat available for serving is comparatively smaller.
As a general guide, allow approximately 750g–1kg of whole duck per adult for a generous main course, depending on appetite and accompaniments.
A 2.5–3kg duck will typically provide approximately 3 generous adult portions, or potentially 4 smaller portions when served with plenty of traditional Christmas trimmings.
If you're entertaining guests or hoping for Boxing Day leftovers, we recommend allowing a little extra.
Simply select your preferred duck size from the options above.

Cooking Instructions
Free Range Roast Duck
Roast duck is particularly delicious when cooked slowly enough to render its natural fat, allowing the skin to become beautifully crisp while keeping the meat succulent.
Oven: 180°C / 160°C Fan / Gas Mark 4
Approximate Cooking Time: Allow 40–45 minutes per kg, plus an additional 20 minutes.
Approximate Cooking Times by Weight
2.5kg Duck: Approximately 2 hours – 2 hours 15 minutes.
3kg Duck: Approximately 2 hours 20 minutes – 2 hours 35 minutes.
Cooking times are approximate guides for an unstuffed bird. Oven performance and the shape of the bird can affect cooking times.
How to Roast Your Christmas Duck
-
Preheat your oven to 180°C / 160°C Fan / Gas Mark 4.
-
Remove the duck from its packaging and check the cavity for any giblets or packaging.
-
Pat the skin thoroughly dry using kitchen paper.
-
Place the duck breast-side up on a rack inside a deep roasting tray.
-
Lightly score or prick the skin in fatty areas, taking care not to pierce the meat.
-
Season generously with sea salt and freshly ground black pepper.
-
For additional flavour, place a halved orange, fresh thyme or rosemary inside the cavity.
-
Roast according to the approximate cooking time for your selected weight.
-
Carefully drain excess rendered fat from the roasting tray periodically, taking care with the hot fat.
-
For a beautifully crisp finish, increase the oven temperature to 200°C / 180°C Fan for the final 15–20 minutes, watching carefully to prevent burning.
-
Check that the thickest parts of the breast and thigh reach an internal temperature of 75°C.
-
Remove from the oven and allow to rest for approximately 15–20 minutes before carving.
Butcher's Tip: Duck naturally releases a generous amount of fat during roasting. Carefully strain and save the rendered fat for cooking wonderfully crisp roast potatoes.
Important Cooking Information
All cooking times are approximate and based on cooking from chilled.
Larger or thicker birds may require additional cooking time.
Always ensure the thickest parts of the breast and thigh reach 75°C before serving.
Use a food thermometer rather than relying on cooking time or appearance alone.
Follow the use-by date and storage instructions supplied with your order.
Serving Suggestions
Our Free Range Duck is a wonderful centrepiece for a traditional Christmas dinner.
Serve with golden roast potatoes, honey-roasted parsnips, buttery Brussels sprouts, red cabbage and seasonal winter vegetables.
For a classic accompaniment, try a rich orange sauce, a red wine gravy or a delicious cherry sauce.
Duck also pairs beautifully with apple, cranberry and warming festive spices.
Make the Most of Your Duck Fat
One of the pleasures of roasting duck is the delicious fat released during cooking.
Carefully strain the rendered fat and use it to roast your Christmas potatoes for an exceptionally crisp, golden finish.
Boxing Day Leftovers
Leftover roast duck makes delicious sandwiches, festive salads and hearty winter dishes.
Try shredded duck with spring onions and hoisin sauce in warm pancakes, or combine with seasonal vegetables for a comforting winter pie.
Refrigerate leftovers promptly and use within 48 hours, or freeze for later enjoyment.
