Product Information
Butcher's Tip: Allow approximately 250–330g of uncooked beef per person, depending on appetites and the number of accompaniments. If you're planning on delicious leftover roast beef sandwiches, consider choosing the next size up.
Rump is a naturally leaner cut than rib eye. For the best results, cook with care, allow the joint to rest properly and carve into thin slices across the grain.
Cooking Instructions
Traditional Roast Beef Rump Joint
For the best results, we recommend using a reliable meat thermometer rather than relying solely on cooking times.
Oven: 220°C / 200°C Fan / Gas Mark 7 initially, then reduce to 180°C / 160°C Fan / Gas Mark 4.
-
Remove the beef from its packaging and pat dry with kitchen paper.
-
Season generously with sea salt and freshly ground black pepper.
-
Rub lightly with oil and, if desired, add fresh rosemary, thyme and garlic.
-
Preheat your oven to 220°C / 200°C Fan.
-
Place the beef in a roasting tray and roast for approximately 15–20 minutes to develop a beautifully browned exterior.
-
Reduce the oven temperature to 180°C / 160°C Fan and continue roasting until the beef reaches your preferred internal temperature.
-
Remove from the oven and rest loosely covered for approximately 20–30 minutes.
-
Carve thinly across the grain and serve with your favourite accompaniments.
Internal Temperature Guide
For an intact whole-muscle beef joint, the following are approximate temperatures after resting:
| Preference |
Internal Temperature |
| Rare |
50–52°C |
| Medium Rare |
55–57°C |
| Medium |
60–63°C |
| Medium Well |
65–68°C |
| Well Done |
70°C+ |
The internal temperature may rise several degrees while the beef rests, so remove it from the oven slightly before reaching your preferred final temperature.
Butcher's Recommendation: Medium rare is an excellent choice for rump, helping preserve tenderness and succulence.
Rare or pink beef is not suitable for everyone. Customers who require thoroughly cooked beef should follow appropriate food safety guidance.
Important Cooking Information
Cooking times will vary depending on the weight and shape of your joint, your oven and the starting temperature of the beef.
Always use a reliable meat thermometer.
Allowing the beef to rest before carving helps retain its juices.
For the best eating experience, carve rump into thin slices across the grain.
