Dry Aged French Trimmed Beef Rib – Premium British Roasting Joint
A magnificent traditional British beef roasting joint, expertly dry-aged and French trimmed by The Artisan Butcher in Warwick.
Few things make a more impressive centrepiece than a beautifully roasted rib of British beef.
Our Dry Aged French Trimmed Beef Rib is a true butcher's classic, carefully selected for its natural marbling, exceptional flavour and beautifully tender texture.
Prepared from premium British beef, each joint is traditionally dry-aged in-house to develop the deep, rich flavour and tenderness that make properly matured rib of beef so special.
Our skilled Warwick butchers then carefully French trim the rib bones, removing the surrounding meat and fat to create the elegant presentation associated with the finest traditional roasting joints.
The result is a magnificent bone-in beef roast, perfect for bringing to the table on Christmas Day, celebrating New Year's Eve or making a Sunday lunch truly memorable.
Properly matured, expertly prepared and full of exceptional British beef flavour.
Why Choose Our French Trimmed Beef Rib?

-
Expertly French Trimmed – beautifully presented rib bones create an impressive roasting centrepiece.
-
Naturally Succulent – the marbling within the rib helps maintain tenderness and moisture during roasting.

-
Prepared by Skilled Butchers – expertly trimmed and prepared at our independent Warwick butcher's shop.
A Traditional Butcher's Roasting Joint
The rib of beef has long been regarded as one of the finest roasting joints, prized for its natural tenderness, generous marbling and wonderfully rich flavour.
Unlike leaner roasting cuts, the fat distributed throughout the rib helps keep the beef succulent during cooking.
Our traditional dry-ageing process allows moisture to reduce naturally while enzymes gradually tenderise the meat, concentrating its flavour and developing the characteristic richness of properly matured British beef.
French trimming gives the joint its distinctive presentation, with the rib bones carefully cleaned and exposed to create an elegant, restaurant-quality centrepiece.
It's the perfect choice for anyone who wants to serve a truly memorable roast beef dinner.

Cooking Instructions
Dry Aged French Trimmed Beef Rib – Oven Roasting
Our dry-aged French trimmed rib of beef is ideal for traditional oven roasting, producing a beautifully browned exterior and a succulent, tender centre.
Oven: Initially 220°C / 200°C Fan / Gas Mark 7, reducing to 180°C / 160°C Fan / Gas Mark 4.
Approximate Cooking Times
After the initial high-temperature roasting period, allow approximately:
-
Medium Rare: 15 minutes per 500g.
-
Medium: 20 minutes per 500g.
These timings are a starting guide only. Joint size, thickness, bone structure and oven performance can substantially affect cooking times.
Internal Temperature Guide
For an intact whole beef joint thoroughly seared on the outside:
-
Rare: Approximately 50–52°C.
-
Medium Rare: Approximately 55–57°C.
-
Medium: Approximately 60–63°C.
-
Medium Well: Approximately 65–68°C.
-
Well Done: Approximately 70°C or above.
These are approximate serving temperatures, not guaranteed food-safety temperatures. The temperature may continue to rise during resting.
How to Roast Your Beef Rib
-
Remove the joint from the fridge approximately 30–60 minutes before cooking, keeping it covered in a cool place.
-
Preheat the oven to 220°C / 200°C Fan / Gas Mark 7.
-
Remove the packaging and pat the beef dry with kitchen paper.
-
Rub the outside with a little oil and season generously with sea salt and freshly ground black pepper.
-
Place the beef in a sturdy roasting tray, with the rib bones underneath.
-
Roast at the higher temperature for approximately 20 minutes to develop a beautifully browned exterior.
-
Reduce the oven temperature to 180°C / 160°C Fan / Gas Mark 4.
-
Continue roasting, using the approximate cooking times as a guide.
-
Check the centre of the thickest part with a meat thermometer, avoiding contact with the bone.
-
Remove from the oven when approaching your preferred level of doneness.
-
Rest loosely covered for approximately 20–30 minutes before carving.
Butcher's Tip: The secret to beautifully tender roast beef is allowing sufficient resting time. Resting helps the juices settle throughout the joint, producing succulent slices when carved.
Cooking From Frozen
For best results, we recommend fully defrosting your beef rib before cooking.
-
Place the frozen joint in a suitable container on the bottom shelf of your refrigerator.
-
Allow sufficient time to defrost completely. Large bone-in joints may require several days, depending on their weight and thickness.
-
Once fully defrosted, follow the roasting instructions above.
-
Do not roast a partially frozen joint using the standard cooking times.
Always follow the storage and defrosting guidance supplied with your product.
Important Cooking Information
All cooking times are approximate guides and will vary according to joint size, thickness, starting temperature and oven performance.
We strongly recommend using a meat thermometer to check your preferred level of doneness.
Whole beef joints served rare or medium rare should be thoroughly seared on the outside and handled hygienically. Thoroughly cooked beef is the safer choice for vulnerable diners, including pregnant women, young children, older people and those with weakened immune systems.
Follow the use-by date and storage instructions supplied with your order.
