Cooking Instructions
British Beef Fillet – Oven Roasting
Beef fillet is naturally tender and lean, making careful cooking particularly important. For the finest results, we recommend using a meat thermometer to achieve your preferred level of doneness.
Oven: 200°C / 180°C Fan / Gas Mark 6
Approximate Cooking Times: Allow around 20–25 minutes per 500g for medium-rare as an initial guide, but begin checking the internal temperature early, particularly with larger joints.
Cooking times will vary considerably depending on the thickness and shape of the fillet, its starting temperature and your oven.
Internal Temperature Guide
For an intact whole beef fillet that has been properly seared on the outside:
-
Rare: Approximately 50–52°C
-
Medium Rare: Approximately 55–57°C
-
Medium: Approximately 60–63°C
-
Medium Well: Approximately 65–68°C
-
Well Done: Approximately 70°C or above
These are serving-temperature guides, not guaranteed food-safety temperatures. The internal temperature may rise further while the beef rests.
How to Roast Your Beef Fillet
-
Remove the fillet from its packaging and pat dry with kitchen paper.
-
Season generously with sea salt and freshly ground black pepper.
-
Heat a little oil in a heavy-based frying pan.
-
Sear the fillet on all sides until beautifully browned.
-
Transfer to a roasting tray and place in the preheated oven.
-
Roast until approaching your preferred internal temperature, checking regularly with a meat thermometer.
-
Remove from the oven and rest loosely covered for approximately 15–20 minutes.
-
Carve into generous slices and serve.
Butcher's Tip: Because beef fillet is exceptionally lean, avoid overcooking. A beautifully seared exterior and careful temperature control will help preserve its wonderful tenderness.
Beef Fillet – Air Fryer Instructions
Air Fryer: 180°C
Approximate Cooking Time: Around 20–25 minutes per 500g as an initial guide, checking temperature early.
-
Preheat your air fryer to 180°C.
-
Season the fillet with sea salt, black pepper and a little oil.
-
Sear in a hot frying pan to develop a rich golden crust.
-
Transfer to the air fryer basket, ensuring sufficient space for air circulation.
-
Cook until approaching your preferred internal temperature.
-
Rest for approximately 15 minutes before carving.
Important: Air fryer capacities and cooking performance vary significantly. Larger joints may not fit or cook evenly. Use a meat thermometer rather than relying on cooking time alone.
Important Cooking Information
All cooking times are approximate guides for cooking from chilled.
Whole beef joints served rare or medium rare should be thoroughly seared on the outside and handled hygienically. Rare or medium-rare beef is not recommended for vulnerable diners, including pregnant women, young children, older people and those with weakened immune systems.
For thorough cooking, follow appropriate food-safety guidance and check the internal temperature with a food thermometer.
Follow the use-by date and storage instructions supplied with your order.
