British Boneless Pork Shoulder – Rolled Slow-Roasting Joint
Richly flavoured, beautifully succulent and expertly rolled by our Warwick butchers. Our Free Range British Boneless Pork Shoulder is a traditional roasting favourite, perfect for slow-cooked Sunday lunches, tender pulled pork and generous family feasts.
There's something particularly satisfying about a pork shoulder that has been gently roasting for hours, filling the kitchen with the wonderful aroma of a traditional home-cooked meal.
Naturally marbled with fat and rich in flavour, pork shoulder is one of the most rewarding cuts for slow cooking.
Our British Boneless Pork Shoulder is carefully selected from premium British pork, expertly trimmed, boned, rolled and tied in-store by our skilled butchers at The Artisan Butcher in Warwick.
Unlike leaner cuts such as pork loin or leg, shoulder contains more natural marbling and connective tissue. As it cooks gently, these gradually soften, producing exceptionally tender, juicy meat with a wonderfully rich flavour.
Cook it until beautifully tender for a traditional roast, or allow it to become soft enough to pull apart into delicious strands of succulent pork.
The boneless, rolled preparation makes this joint particularly convenient for home cooking, with no bones to remove when serving.
Whether you're preparing a Sunday roast with all the trimmings, a relaxed weekend family meal or a generous batch of pulled pork, our boneless pork shoulder offers outstanding versatility and excellent value.
Serve with golden roast potatoes, apple sauce and rich pork gravy, or shred into soft rolls with homemade coleslaw and barbecue sauce.
Premium British pork. Expertly rolled and tied. Rich in flavour and perfect for slow roasting.

What Makes Our Boneless Pork Shoulder Special?
A Traditional British Butcher's Favourite
Pork shoulder has long been prized for its excellent flavour and versatility.
Taken from a harder-working part of the animal, it contains more connective tissue and natural marbling than leaner cuts.
These qualities make it particularly suitable for long, gentle cooking.
With patience, a simple shoulder joint can become an exceptionally tender and satisfying family meal.
Naturally Marbled for Succulence
The natural fat within pork shoulder is one of its greatest advantages.
During slow cooking, this fat gradually renders while the connective tissue softens, helping create beautifully juicy, flavoursome meat.
This makes shoulder especially rewarding for customers who enjoy rich, traditional pork flavour.
Expertly Boned, Rolled & Tied
Our skilled butchers carefully remove the bones before trimming, rolling and tying the shoulder into a convenient roasting joint.
The rolled preparation creates a neat shape for cooking and makes the finished joint easier to handle.
Once cooked, simply remove the butcher's string before carving or shredding.
Perfect for Traditional Slow Roasting
A gently roasted pork shoulder makes a wonderful Sunday lunch.
Cooked slowly with herbs, garlic and vegetables, it develops a rich savoury flavour and tender texture.
Serve with traditional roast potatoes, seasonal greens, apple sauce and homemade gravy.
Exceptional for Pulled Pork
Pork shoulder is one of the classic cuts for pulled pork.
As it cooks over several hours, the connective tissue breaks down and the meat becomes soft enough to shred with forks.
The result is wonderfully succulent pork that can be served in bread rolls, flatbreads, tacos or alongside traditional accompaniments.
Excellent for One-Pot Cooking
Pork shoulder is also ideal for braising and covered roasting.
Cook gently with onions, garlic, herbs, stock or cider to create a rich, comforting dish.
The long cooking time allows the meat to become tender while the cooking liquid develops a delicious sauce.
Quality British Pork
Our boneless pork shoulder is prepared using carefully selected British pork.
We believe quality sourcing and traditional butchery skills are essential to producing exceptional roasting joints.
Outstanding Value for Family Meals
Pork shoulder offers an excellent combination of flavour, versatility and value.
It's a particularly good choice for feeding families, preparing generous sharing meals or cooking ahead for several occasions.
Prepared by Our Warwick Butchers
Every boneless pork shoulder is expertly trimmed, rolled and tied in-store by our skilled butchers.
We take pride in preparing traditional British cuts with the care and attention customers expect from an independent butcher.
Cooking Instructions – Perfect Slow-Roasted Pork Shoulder
Pork shoulder benefits from gentle cooking over several hours.
The aim is to allow the connective tissue to soften gradually while keeping the meat moist and succulent.
Traditional Slow-Roasted Pork Shoulder
Oven: 160°C / 140°C Fan / Gas Mark 3
Suggested Ingredients:
-
1 British Boneless Pork Shoulder Joint
-
Sea salt and freshly ground black pepper
-
1 tablespoon olive oil
-
2 onions, roughly chopped
-
2 carrots, roughly chopped
-
3 garlic cloves, lightly crushed
-
Fresh rosemary, sage or thyme
-
250ml pork or chicken stock
Method
-
Remove the pork from its packaging and pat dry with kitchen paper.
-
Preheat the oven to 160°C / 140°C Fan / Gas Mark 3.
-
Season the joint with salt and freshly ground black pepper.
-
Heat a little oil in a large frying pan and brown the pork on all sides if desired.
-
Place the chopped onions, carrots, garlic and herbs into a deep roasting tin.
-
Position the pork shoulder on top of the vegetables.
-
Pour the stock into the bottom of the roasting tin.
-
Cover the joint and roasting tin tightly with foil or a suitable lid.
-
Place in the oven and roast gently for approximately 4–6 hours, depending on the size and shape of the joint.
-
Check the liquid occasionally, adding a little more stock or water if necessary.
-
Continue cooking until the pork is thoroughly cooked and tender.
-
For a browned finish, remove the covering towards the end of cooking and increase the oven temperature briefly.
-
Check the thickest part of the meat with a reliable food thermometer.
-
Remove from the oven and rest for approximately 20 minutes.
-
Carefully remove the butcher's string.
-
Carve into generous portions or shred, depending on your preferred serving style.
Food Safety Guidance: Cook pork to a core temperature of at least 75°C.
For particularly tender slow-cooked shoulder, the internal temperature will often rise towards 90–95°C as the connective tissue softens.
Use a food thermometer and check the tenderness of the meat rather than relying solely on cooking time.
Approximate Slow-Roasting Times
The following are broad estimates for covered roasting at 160°C / 140°C Fan.
| Joint Weight | Approximate Cooking Time |
|---|---|
| 1kg | 3–4 hours |
| 1.5kg | 4–5 hours |
| 2kg | 4½–6 hours |
| 2.5kg | 5–7 hours |
| 3kg | 6–8 hours |
These are planning estimates rather than guaranteed cooking times.
The exact time will depend on the joint's shape, thickness and whether you want meat suitable for carving or pulling apart.
Butcher's Tip: For pulled pork, don't rush the cooking. If the meat is safely cooked but still resists shredding, it usually needs more time for the connective tissue to soften.
How to Make Perfect Pulled Pork
Boneless pork shoulder is an excellent choice for homemade pulled pork.
Suggested Ingredients:
-
1 British Boneless Pork Shoulder
-
2 tablespoons brown sugar
-
1 tablespoon smoked paprika
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1 teaspoon ground cumin
-
Salt and freshly ground black pepper
-
150ml apple juice or stock
-
Your favourite barbecue sauce, optional
Method
-
Preheat the oven to 150°C / 130°C Fan.
-
Combine the sugar, paprika, garlic powder, onion powder, cumin, salt and pepper.
-
Rub the seasoning mixture over the pork.
-
Place the joint in a deep roasting tin.
-
Pour the apple juice or stock around the meat.
-
Cover tightly with foil or a suitable lid.
-
Cook slowly for approximately 5–8 hours, depending on the size of the joint.
-
Check occasionally to ensure there is sufficient liquid in the tin.
-
Continue cooking until the pork is thoroughly cooked and easily pulls apart with forks.
-
Remove from the oven and rest briefly.
-
Carefully remove the butcher's string.
-
Shred the meat with two forks.
-
Mix with some of the reduced cooking juices.
-
Add barbecue sauce if desired and serve.
For pulled pork, an internal temperature of approximately 90–95°C is often associated with the soft texture needed for shredding, although tenderness is the final test.
Can You Make Crackling with Pork Shoulder?
If your boneless pork shoulder is supplied with the skin attached, it can be prepared for crackling.
However, crackling requires a different approach from covered slow roasting, as moisture can prevent the skin from crisping.
For a skin-on joint:
-
Dry the skin thoroughly.
-
Score it carefully if not already prepared.
-
Rub with sea salt.
-
Begin roasting uncovered at approximately 230°C / 210°C Fan for 20–30 minutes.
-
Reduce the temperature for the slower cooking stage.
-
If covering the joint, be aware that the skin may soften.
-
For the best result, crisp the skin separately at the end if necessary.
Butcher's Tip: If crisp crackling is your main priority, ask us about the best preparation for your joint before cooking.
