What Makes Our Boneless Pork Leg Special?
A Traditional British Roasting Favourite
Pork leg has long been a staple of the British Sunday table.
Its lean meat, savoury flavour and generous size make it a wonderful choice for family gatherings.
Served with crisp crackling, apple sauce and homemade gravy, it's a traditional roast that never goes out of fashion.
Boneless, Rolled & Tied for Easy Carving
Our skilled butchers carefully remove the bone before rolling and tying the joint into a neat shape.
This traditional preparation helps the joint cook more evenly and makes carving much easier.
Unlike a bone-in joint, there is no need to work around the bone when serving.
Simply remove the butcher's string after cooking and resting, then carve into generous slices.
Naturally Leaner Than Shoulder or Belly
Pork leg is a relatively lean cut, making it particularly suitable for customers who enjoy traditional carved roast pork.
Unlike pork belly, which contains generous layers of fat, or shoulder, which benefits from extended slow cooking, pork leg is best roasted carefully to preserve its tenderness.
The result is a satisfying joint with excellent flavour and a firm, carveable texture.
Delicious Golden Crackling
One of the great pleasures of roast pork is the crackling.
When the skin is thoroughly dried, properly scored and roasted at the right temperature, it develops a deliciously crisp, golden finish.
The contrast between crunchy crackling and tender slices of pork makes this a particularly satisfying roasting joint.
Quality British Pork
Our boneless pork leg is prepared using carefully selected British pork.
We believe that quality sourcing and traditional butchery are essential to delivering the flavour and eating quality our customers expect.
Perfect for Family Gatherings
A rolled leg of pork is a practical and impressive choice for feeding a family.
Its neat shape makes portioning straightforward, while the lean meat and traditional flavour appeal to a wide range of tastes.
It's particularly well suited to Sunday lunches, festive meals and celebrations.
Excellent for Leftovers
Cold roast pork is just as useful as the original meal.
Slice it for sandwiches, serve with salads or use in a variety of comforting family dishes.
A generous roasting joint can provide delicious meals beyond Sunday lunch.
Prepared by Our Warwick Butchers
Every boneless pork leg is carefully trimmed, rolled and tied in-store by our skilled butchers.
We take pride in preparing traditional roasting joints with the attention to detail customers expect from an independent butcher.
Whether you're cooking for a family lunch or a special occasion, we're always happy to offer advice on joint sizes and preparation.
Cooking Instructions – Perfect Roast Pork Leg with Crispy Crackling
Boneless pork leg is naturally leaner than shoulder or belly, so careful roasting is important to preserve its tenderness.
For the best results, use an initial period of high heat to encourage crackling, followed by a lower roasting temperature.
Traditional Roast Pork Leg with Golden Crackling
Oven: 230°C / 210°C Fan / Gas Mark 8 initially, then reduce to 180°C / 160°C Fan / Gas Mark 4.
Suggested Ingredients:
-
1 British Boneless Pork Leg Joint
-
Sea salt
-
Freshly ground black pepper
-
1 tablespoon olive oil
-
1 onion, roughly chopped
-
2 carrots, roughly chopped
-
Fresh sage, thyme or rosemary
-
A little pork or chicken stock
Method
-
Remove the pork from its packaging and pat the skin thoroughly dry with kitchen paper.
-
If the skin has not already been scored, ask your butcher to prepare it for crackling.
-
For particularly good crackling, leave the joint uncovered on a tray in the refrigerator for several hours or overnight to help dry the skin.
-
Preheat the oven to 230°C / 210°C Fan / Gas Mark 8.
-
Rub a little oil and sea salt into the skin, working the salt into the scoring.
-
Season the meat with freshly ground black pepper and your preferred herbs.
-
Place the chopped onion and carrots into a roasting tin.
-
Position the pork joint on top, with the skin facing upwards.
-
Add a little stock or water to the bottom of the tin, taking care not to wet the skin.
-
Roast at the higher temperature for approximately 25–30 minutes to begin developing the crackling.
-
Reduce the oven to 180°C / 160°C Fan / Gas Mark 4.
-
Continue roasting until the thickest part of the meat reaches a safe internal temperature.
-
Check the temperature using a food thermometer, inserting the probe into the centre of the joint.
-
If the crackling needs further crisping, increase the oven temperature briefly, watching carefully to prevent burning.
-
Remove the joint from the oven and rest for approximately 15–20 minutes.
-
Carefully remove the butcher's string.
-
Carve into generous slices and serve with crackling and gravy.
Food Safety Guidance: Cook pork to a core temperature of 75°C.
Cooking times depend on the size and shape of the joint. A food thermometer is the most reliable way to check that the pork is thoroughly cooked.
Approximate Roasting Times
The following are broad planning estimates for a rolled boneless pork leg, including the initial period at high heat.
| Joint Weight | Approximate Total Cooking Time |
|---|---|
| 1kg | 1 hour 15 minutes – 1 hour 45 minutes |
| 1.5kg | 1 hour 45 minutes – 2 hours 15 minutes |
| 2kg | 2 hours 15 minutes – 2 hours 45 minutes |
| 2.5kg | 2 hours 45 minutes – 3 hours 15 minutes |
| 3kg | 3 hours 15 minutes – 3 hours 45 minutes |
These timings are approximate and may vary depending on the shape of the joint, oven performance and starting temperature.
Because pork leg is relatively lean, avoid cooking for longer than necessary once the meat has reached a safe temperature.
How to Achieve Perfect Pork Crackling
Good crackling starts with careful preparation.
Dry the skin thoroughly. Moisture on the surface can prevent it from crisping.
Score the skin. Scoring allows the fat beneath the skin to render and helps create the characteristic crackling texture.
Use plenty of salt. Rub salt into the scored skin before roasting.
Start with high heat. A hot oven helps the skin blister and become crisp.
Keep the skin dry. Avoid pouring stock or roasting juices over the skin.
Watch the final stage carefully. If the crackling needs additional heat, check it frequently to prevent burning.
Butcher's Tip: If the meat is fully cooked but the crackling still needs attention, you can carefully remove the skin and crisp it separately in the oven while the pork rests. This helps avoid drying out the lean meat.
Resting Your Pork
Resting is an important part of preparing a good roast.
After cooking, transfer the pork to a warm platter and cover loosely with foil, taking care not to trap too much steam around the crackling.
Allow approximately 15–20 minutes before carving.
This helps retain the natural juices and makes the meat easier to slice.
How to Carve a Rolled Pork Leg
-
Place the rested joint on a stable carving board.
-
Carefully remove the butcher's string.
-
Use a sharp carving knife to cut neat slices across the grain.
-
Carve the pork to your preferred thickness.
-
Serve with pieces of crisp crackling and warm gravy.
Making Traditional Pork Gravy
The roasting juices make a wonderful base for homemade gravy.
-
Remove the pork from the roasting tin and allow it to rest.
-
Carefully pour the roasting juices into a jug.
-
Skim off excess fat.
-
Return the juices to a saucepan.
-
Add a little pork or chicken stock.
-
Thicken with flour or cornflour if desired.
-
Simmer until the gravy reaches your preferred consistency.
-
Season to taste and strain before serving.
For a traditional flavour, add a little apple cider or a spoonful of apple sauce.
