British Bone-In Lamb Shoulder – Premium Slow-Roasting Joint
Rich, succulent and full of traditional flavour. Our British Bone-In Lamb Shoulder is expertly prepared by our Warwick butchers and perfect for slow roasting until beautifully tender.
Few things are more comforting than the aroma of a shoulder of lamb slowly roasting in the oven.
Our British Bone-In Lamb Shoulder is a wonderfully flavoursome roasting joint, carefully selected for its quality, natural marbling and exceptional slow-cooking potential.
Prepared in-store by our skilled butchers at The Artisan Butcher in Warwick, this traditional cut is ideal for customers who appreciate rich, satisfying meat and proper home cooking.
Lamb shoulder naturally contains more connective tissue and marbling than some leaner roasting cuts. When cooked gently over several hours, these gradually soften, producing beautifully succulent meat with a wonderfully deep flavour.
The bone adds character to the roasting juices and makes this a particularly rewarding joint for slow cooking.
Whether you're preparing a traditional Sunday roast with rosemary and garlic, a Mediterranean-inspired lamb dish or tender pulled lamb served with warm flatbreads, our bone-in shoulder offers outstanding versatility.
For a truly special family meal, slow-roast until the meat is tender enough to pull apart with a fork, then serve with golden potatoes, seasonal vegetables and plenty of rich gravy.
Quality British lamb. Expertly prepared. Slowly roasted for exceptional flavour.

What Makes Our Bone-In Lamb Shoulder Special?
A Traditional British Roasting Favourite
Lamb shoulder has long been a favourite in British kitchens.
It's a cut that rewards patience, delivering rich flavour and wonderful tenderness when cooked gently.
Unlike leaner joints that are often roasted quickly, shoulder benefits from time in the oven, allowing its natural connective tissue to soften.
The result is a beautifully succulent roast that's perfect for sharing.
Bone-In for Rich Roasting Juices
Leaving the bone in place is part of the traditional appeal of lamb shoulder.
During slow cooking, the meat surrounding the bone becomes wonderfully tender, while the roasting juices develop a rich savoury character.
These juices make an excellent base for homemade lamb gravy.
Naturally Marbled for Succulence
Lamb shoulder contains natural marbling and connective tissue that make it particularly well suited to slow roasting.
As the joint cooks, the fat renders and the connective tissue gradually softens, creating beautifully tender meat.
It's one of the reasons shoulder is such a popular choice for pulled lamb dishes.
Quality British Lamb
Our lamb shoulder is prepared using carefully selected British lamb.
We believe that quality sourcing and proper butchery make all the difference to the food our customers enjoy at home.
From everyday family meals to special occasion roasts, we're proud to offer traditional British cuts prepared with care.
Perfect for Pulled Lamb
For a relaxed alternative to a traditional carved roast, lamb shoulder can be cooked until the meat easily pulls away from the bone.
Shred the meat into the roasting juices and serve with flatbreads, fresh salads, yoghurt dressing or roasted vegetables.
It's a wonderful option for informal entertaining.
Prepared by Our Warwick Butchers
Every lamb shoulder is hand-cut and trimmed in-store by our skilled butchers.
We take pride in preparing traditional roasting joints that offer excellent flavour, quality and versatility.
Whether you're cooking lamb shoulder for the first time or planning a special family gathering, we're always happy to offer preparation advice.
Cooking Instructions – Perfect Slow-Roasted Lamb Shoulder
Lamb shoulder is at its best when cooked slowly, allowing the natural connective tissue to soften and the meat to become wonderfully tender.
Traditional Slow-Roasted Lamb Shoulder with Rosemary & Garlic
Oven: 160°C / 140°C Fan / Gas Mark 3
Suggested Ingredients:
-
1 British Bone-In Lamb Shoulder
-
2 tablespoons olive oil
-
Sea salt and freshly ground black pepper
-
4–6 garlic cloves
-
Fresh rosemary
-
1 large onion, roughly chopped
-
2 carrots, roughly chopped
-
250–400ml lamb stock or water
-
Optional: a splash of red wine
Method
-
Remove the lamb from its packaging and pat dry with kitchen paper.
-
Preheat the oven to 160°C / 140°C Fan / Gas Mark 3.
-
Rub the lamb with olive oil and season generously with salt and freshly ground black pepper.
-
Make a few small incisions in the surface and insert slivers of garlic and rosemary.
-
Place the chopped onion and carrots into a deep roasting tin.
-
Position the lamb shoulder on top of the vegetables.
-
Pour the stock or water into the bottom of the roasting tin.
-
Cover the tin tightly with foil or a suitable lid.
-
Roast slowly for approximately 4–5 hours for a medium-sized joint, checking occasionally that the liquid has not dried out.
-
Remove the foil for the final 20–30 minutes if you'd like a more golden exterior.
-
Continue cooking until the meat is thoroughly cooked and tender enough to pull apart easily.
-
Remove from the oven and rest for approximately 20 minutes before serving.
Important: Cooking times depend on the size and shape of the joint. For fall-apart lamb shoulder, the meat will generally need to reach a much higher internal temperature than a conventional carved roast, often around 90–95°C, to allow the connective tissue to soften fully.
Use a meat thermometer and check tenderness rather than relying on time alone.
For a Tender, Carveable Roast
If you prefer slices rather than pulled lamb, the shoulder can be roasted for a shorter period.
However, because shoulder contains more connective tissue than leg, it may not carve as neatly or have the same texture.
For the most reliable results, we recommend slow cooking until thoroughly tender.
Making Proper Lamb Gravy
The roasting juices from a bone-in lamb shoulder make a wonderful gravy.
-
Remove the cooked lamb and allow it to rest.
-
Carefully pour the roasting juices into a jug.
-
Skim off excess fat.
-
Return the juices to a saucepan.
-
Add a little lamb stock if required.
-
Thicken with a small amount of flour or cornflour.
-
Simmer until the gravy reaches your preferred consistency.
-
Season to taste and strain if desired.
For additional richness, add a splash of red wine or a little redcurrant jelly.
