Our handmade Beef Wellington is designed to be enjoyed with beautifully pink, tender British beef fillet surrounded by golden, crisp puff pastry.
-
Preheat your oven to 200°C / 180°C Fan / Gas Mark 6.
-
Remove the Wellington from its packaging and place on a parchment-lined baking tray.
-
Lightly brush the pastry with beaten egg for a golden finish.
-
Roast using the approximate timings above.
-
Check that the pastry is fully cooked, including underneath.
-
Allow to rest for 10–15 minutes before carefully carving.
Butcher's Tip: For a beautifully pink centre, the beef would typically be cooked to approximately 55–57°C for medium rare. However, because Beef Wellington contains an enclosed mushroom filling, this temperature alone does not establish that the complete product is safe to eat.
Important Cooking Information: Cooking times are approximate. A validated cooking method is needed to ensure the mushroom filling is safely cooked while retaining the desired pink beef centre. Until that method is confirmed, the safer recommendation is to cook the centre of the complete Wellington to 75°C.
