Free Range Herb-Fed Cockerel
Our Free Range Herb-Fed Cockerels roast beautifully, producing tender, succulent meat and wonderfully golden skin.
Oven: 180°C / 160°C Fan / Gas Mark 4
Approximate Cooking Time: Allow 40 minutes per kg, plus an additional 20 minutes, for an unstuffed bird.
Approximate Cooking Times by Size
Small – 3.5–4kg
Approximately 2 hours 40 minutes – 3 hours.
Medium – 4–4.5kg
Approximately 3 hours – 3 hours 20 minutes.
Large – 4.5–5kg
Approximately 3 hours 20 minutes – 3 hours 40 minutes.
These are approximate cooking guides. Actual cooking times will vary according to the bird's shape, oven performance and preparation. Always check the internal temperature before serving.
How to Roast Your Christmas Cockerel
-
Preheat your oven to 180°C / 160°C Fan / Gas Mark 4.
-
Remove the cockerel from its packaging and remove the giblets from the cavity before cooking.
-
Pat the skin dry with kitchen paper.
-
Place the bird breast-side up in a suitable roasting tray.
-
Rub the skin with a little softened butter or olive oil and season with sea salt and freshly ground black pepper.
-
For additional flavour, place a few sprigs of fresh thyme or rosemary and a halved lemon inside the cavity.
-
Cover loosely with foil to prevent excessive browning during the initial cooking period.
-
Roast according to the approximate cooking time for your selected size.
-
Baste occasionally with the roasting juices.
-
Remove the foil for the final 30 minutes to allow the skin to become beautifully golden.
-
Check the thickest parts of the breast and thigh, avoiding the bone, and ensure the meat reaches an internal temperature of 75°C.
-
Remove from the oven, cover loosely with foil and allow to rest for approximately 20–30 minutes before carving.
Butcher's Tip: A generous resting period allows the juices to settle throughout the meat, giving you wonderfully succulent slices.
Make the Most of Your Giblets
Your Christmas cockerel is supplied with giblets, which can be used to prepare a delicious traditional gravy.
Remove the giblets before roasting and check for any packaging.
For a rich homemade stock, gently simmer the neck, heart and gizzard with onion, carrot, celery, herbs and water until thoroughly cooked. Strain the liquid and combine it with the roasting juices to make a wonderful Christmas gravy.
If a liver is included, it is best cooked separately rather than simmered for a long period, as it can give the stock a bitter flavour.
Butcher's Tip: Homemade giblet gravy is a wonderful accompaniment to roast cockerel and adds that extra touch of traditional Christmas flavour.
Important Cooking Information
All cooking times are approximate and based on cooking from chilled.
Larger or thicker birds may require additional cooking time.
Always ensure the thickest parts of the breast and thigh reach 75°C before serving.
Use a food thermometer rather than relying on cooking time or appearance alone.
Follow the use-by date and storage instructions supplied with your order.
