Approximate Cooking Times Per kg
-
Rare: 25–30 minutes per kg.
-
Medium Rare: 30–35 minutes per kg.
-
Medium: 40–45 minutes per kg.
-
Well Done: 50–60 minutes per kg.
These are approximate total cooking times, including the initial high-temperature roasting period. Joint shape, thickness and oven performance can affect the time required.
Internal Temperature Guide
For an intact whole beef joint thoroughly seared on the outside:
-
Rare: Approximately 50–52°C.
-
Medium Rare: Approximately 55–57°C.
-
Medium: Approximately 60–63°C.
-
Medium Well: Approximately 65–68°C.
-
Well Done: Approximately 70°C or above.
These are approximate serving temperatures, not guaranteed food-safety temperatures. The internal temperature may continue to rise during resting.
How to Roast Your Beef Sirloin
-
Remove the beef from the refrigerator approximately 30–60 minutes before cooking, keeping it covered in a cool place.
-
Preheat your oven to 220°C / 200°C Fan / Gas Mark 7.
-
Remove the packaging and pat the beef dry with kitchen paper.
-
Rub the joint with a little oil, sea salt and freshly ground black pepper.
-
Place the sirloin in a roasting tray with the fat covering facing upwards.
-
Roast at the higher temperature for approximately 20 minutes to brown the outside.
-
Reduce the oven temperature to 180°C / 160°C Fan / Gas Mark 4.
-
Continue roasting, using the approximate cooking times as a guide.
-
Check the thickest part of the joint with a meat thermometer to determine your preferred level of doneness.
-
Remove from the oven and rest loosely covered for 20–30 minutes before carving.
-
Carve across the grain into generous slices and serve.
Butcher's Tip: Don't rush the resting time. Allowing your sirloin to rest helps the juices settle throughout the meat, giving you beautifully tender, succulent slices.
Cooking From Frozen
For the best results, we recommend fully defrosting your beef before cooking.
-
Place the frozen joint in a suitable container on the bottom shelf of your refrigerator.
-
Allow sufficient time to defrost completely. Larger joints may require several days.
-
Once fully defrosted, follow the roasting instructions above.
-
Do not use the standard cooking times for a partially frozen joint.
Always follow the storage and defrosting guidance supplied with your order.
Important Cooking Information
All cooking times are approximate guides for cooking from chilled. Larger or thicker joints may require additional time.
We recommend using a meat thermometer rather than relying on cooking time alone.
Whole beef joints served rare or medium rare should be thoroughly seared on the outside and handled hygienically. Thoroughly cooked beef is the safer choice for vulnerable diners, including pregnant women, young children, older people and those with weakened immune systems.
Follow the use-by date and storage instructions supplied with your order.
