Herb Fed Free Range Whole Chicken – Premium British Roasting Chicken
Beautifully succulent, naturally flavoursome and traditionally reared. Our Herb Fed Free Range Whole Chickens are slow-grown in Britain with exceptional attention to welfare, quality and flavour.
A proper roast chicken is one of life's great pleasures. Golden, crisp skin, wonderfully tender meat and that unmistakable aroma filling the kitchen.
At The Artisan Butcher, we believe a truly exceptional roast starts with the quality of the bird.
Our Herb Fed Free Range Whole Chickens are a world apart from ordinary mass-produced poultry.
Raised in Britain using traditional, slower-growing methods, these chickens have the freedom to roam and develop naturally, with a distinctive herb-fed diet that forms an important part of their rearing.
The result is a chicken with outstanding natural flavour, satisfying texture and beautifully succulent meat.
Reared with an emphasis on animal welfare and without routine antibiotics or growth promoters, these are birds produced with care and respect for traditional farming.
Whether you're preparing a Sunday roast for the family, entertaining friends or planning a special meal, our Herb Fed Free Range Whole Chicken makes a wonderful centrepiece.
Simply roast with butter, lemon, garlic and fresh herbs, then serve with golden roast potatoes, seasonal vegetables and proper homemade gravy.

What Makes Our Herb Fed Free Range Chicken Special?
Slow-Grown for Natural Flavour
Unlike intensively produced chickens bred for rapid growth, our Herb Fed Free Range Chickens are raised using slower-growing methods.
Allowing birds more time to develop is an important part of traditional poultry production and helps produce meat with satisfying texture and natural flavour.
It's a difference that makes these chickens particularly rewarding to roast.
A Distinctive Herb-Fed Diet
The Herb Fed approach to poultry rearing is one of the defining characteristics of these birds.
Their feeding programme incorporates herbs as part of a carefully managed diet, supporting the producer's distinctive approach to traditional poultry farming.
Combined with slower growth and free-range rearing, it helps create a premium chicken with real character.
High Welfare British Farming
Our chickens are raised in Britain with an emphasis on animal welfare and responsible farming.
Free-range rearing allows birds access to outdoor space, while careful husbandry and slower-growing methods support their natural development.
The birds are raised without routine antibiotics or growth promoters, reflecting the producer's approach to welfare and quality.
Exceptional for Roasting
A whole free-range chicken is one of the most versatile and satisfying roasting joints.
The combination of tender breast meat, richly flavoured legs and golden roasting skin makes it a wonderful choice for a traditional family meal.
It needs very little embellishment to become something special.
More Than One Meal
A quality whole chicken offers excellent versatility beyond the Sunday roast.
Use leftover meat for sandwiches, salads, pies, soups or risotto, and save the carcass to prepare a delicious homemade chicken stock.
It's a traditional, resourceful way to make the most of a premium ingredient.
Prepared by Our Warwick Butchers
Every whole chicken is carefully prepared by our skilled team at The Artisan Butcher.
We take pride in offering quality poultry with clear provenance and the attention to detail our customers expect from a traditional independent butcher.
Cooking Instructions – Perfect Roast Free Range Chicken
A beautifully roasted free-range chicken needs little more than butter, seasoning and a little patience.
Traditional Oven-Roasted Whole Chicken
Oven: 200°C / 180°C Fan / Gas Mark 6
Suggested Ingredients:
-
1 Herb Fed Free Range Whole Chicken
-
Softened butter or olive oil
-
Sea salt and freshly ground black pepper
-
1 lemon, halved
-
Fresh thyme or rosemary
-
3–4 garlic cloves
-
1 onion, roughly chopped
Method
-
Remove the chicken from its packaging and check the cavity for any giblets or packaging.
-
Preheat your oven to 200°C / 180°C Fan / Gas Mark 6.
-
Pat the chicken dry with kitchen paper. Do not wash raw chicken.
-
Rub the skin with softened butter or olive oil.
-
Season the bird with salt and freshly ground black pepper.
-
Place the lemon halves, herbs and garlic loosely inside the cavity.
-
Arrange the chopped onion in a roasting tin and position the chicken on top.
-
Roast until thoroughly cooked, using the bird's weight to estimate the cooking time.
-
Check the thickest part of the breast and thigh with a food thermometer, avoiding contact with bone.
-
Ensure the chicken reaches a core temperature of 75°C.
-
Remove from the oven and allow to rest for approximately 15–20 minutes before carving.
Approximate Roasting Times
As a general starting point, allow approximately 20 minutes per 500g, plus an additional 20 minutes at the temperature above.
These timings are estimates only. The size, shape and starting temperature of the bird, along with oven performance, will affect the cooking time.
Always use a food thermometer to confirm a core temperature of 75°C before serving.
For Beautifully Golden Skin
For an attractive golden finish:
-
Pat the skin dry before seasoning.
-
Rub with butter or oil.
-
Avoid covering the bird throughout the entire roasting process.
-
If the skin browns too quickly, loosely cover with foil.
-
Allow the chicken to rest before carving.
Making Proper Chicken Gravy
Once the chicken has finished roasting:
-
Remove the bird from the roasting tin and leave it to rest.
-
Carefully spoon off excess fat from the roasting juices.
-
Place the roasting tin over a gentle heat, if suitable.
-
Add a little flour and stir into the remaining juices.
-
Gradually whisk in chicken stock.
-
Simmer until thickened.
-
Season to taste and strain before serving if preferred.
For extra flavour, add a splash of white wine or a few fresh herbs.
