Cooking Instructions
Our Smoked Gammon Joints are freshly prepared by our skilled butchers. The following instructions are suitable for cooking from chilled.
All cooking times are approximate. We recommend using a food thermometer to ensure your gammon is thoroughly cooked.
Traditional Simmered Smoked Gammon
Cooking Time: Approximately 45 minutes per kg, plus an additional 20 minutes.
-
Remove the gammon from its packaging.
-
Place in a large saucepan and cover completely with cold water.
-
Bring to the boil, drain the water and refill with fresh water if you prefer a milder, less salty flavour.
-
Bring back to a gentle simmer.
-
Cook for approximately 45 minutes per kg, plus 20 minutes.
-
Check that the centre reaches 75°C.
-
Remove from the water and allow to rest for 15–20 minutes before carving.
Butcher's Tip: Add a bay leaf, peppercorns and a halved onion to the cooking water for extra flavour.
Oven-Roasted Smoked Gammon
Oven: 180°C / 160°C Fan / Gas Mark 4
Cooking Time: Approximately 60 minutes per kg.
-
Preheat your oven.
-
Remove the gammon from its packaging and place in a roasting tray with a little water.
-
Cover loosely with foil to prevent the joint drying out.
-
Roast for approximately 60 minutes per kg.
-
Remove the foil for the final 20–30 minutes.
-
For a delicious glazed finish, brush with honey, maple syrup or wholegrain mustard.
-
Continue roasting until the glaze is golden and caramelised.
-
Ensure the centre reaches 75°C.
-
Rest for 15–20 minutes before carving.
Butcher's Tip: A honey and wholegrain mustard glaze complements the natural smoky flavour beautifully.
Important Cooking Information
All cooking times are approximate guides based on cooking from chilled. Larger or thicker joints may require additional cooking time.
Always check that the thickest part of the gammon reaches 75°C before serving. Use a food thermometer rather than relying on cooking time alone.
Follow the use-by date and storage instructions supplied with your order.
Serving Suggestions
Serve your smoked gammon hot with golden roast potatoes, buttered seasonal vegetables and a generous spoonful of wholegrain mustard.
For a traditional festive finish, glaze with honey and mustard and serve alongside our handmade stuffing, pigs in blankets and your favourite Christmas trimmings.
Perfect for Boxing Day: Cold smoked gammon is wonderful in crusty sandwiches with chutney, on festive sharing platters or served with homemade pickles.
Leftovers also make delicious ham and leek pies, hearty soups and comforting winter suppers.
Refrigerate leftovers promptly and use within 48 hours, or freeze for later enjoyment.
