Cooking Instructions
Perfect Goose Fat Roast Potatoes
Oven: 220°C / 200°C Fan / Gas Mark 7
Cooking Time: Approximately 45–60 minutes.
-
Preheat your oven.
-
Peel your potatoes and cut into evenly sized pieces.
-
Place in a saucepan of salted water, bring to the boil and simmer for approximately 8–10 minutes until the edges begin to soften.
-
Drain thoroughly and allow the potatoes to steam dry for a few minutes.
-
Shake gently in the colander to roughen the edges.
-
Add enough goose fat to coat the base of a roasting tray and heat in the oven until hot.
-
Carefully add the potatoes to the hot fat, turning to coat evenly.
-
Roast for approximately 45–60 minutes, turning occasionally, until beautifully golden and crisp.
-
Season with sea salt and serve immediately.
Butcher's Tip: Maris Piper or King Edward potatoes are excellent choices for roasting. Their fluffy texture produces wonderfully crisp edges when cooked in hot goose fat.
